Fifty ohms is the practical part
At 50 ohms the HD 599 works from a laptop, a phone or an interface without a separate amplifier, which is what separates it from the 300 ohm HD 600 and HD 650. For a listener who wants the open-back presentation without buying an amplifier alongside, this is the model that delivers it.

Voicing
The HD 599 is tuned more for enjoyment than for analysis, with a relaxed presentation that suits long listening. If the intention is mixing rather than listening, the HD 560S at 120 ohms is voiced closer to neutral and is the better reference of the two.
Open design
Like every open-back headphone the HD 599 leaks sound outward and lets room noise in. In a shared space or on a commute that is a real limitation, and a closed model such as the HD 569 at 23 ohms or the HD 620S at 150 ohms would be the correct choice instead.
